French toast is one of those breakfast foods that makes you feel like you've put a lot of effort into aweekend brunch, when it can actually be made in about 20 minutes, start to finish. This is my version of French Toast, and it's one of my faves. Most people spread butter over their French toast and then drizzle maple syrup over the top. However, I don't like the taste of maple, so I sprinkle sugar over my French toast. This recipe is for 8 pieces of French toast, but you can adjust as needed for the size of your own family.
8 pieces Sandwich Bread
4 Eggs
1 tsp. Vanilla Extract
1 tsp. Cinnamon
1/4 cup Half and Half
Vegetable oil for griddle or skillet
Lay bread out on a paper towel to dry out while preparing the egg batter.
Crack 8 eggs into a shallow, wide bowl. (I use a fork to pull the white "strings" out because I think they're gross.) Add vanilla, cinnamon, and half and half. Mix together until well-blended and there is no separation of yolks and whites. (I use a small battery-powered frother to mix mine.)
Lightly mist a non-stick griddle (or large skillet) with vegetable oil and heat over medium heat.
Dip bread, one slice at a time, into egg mixture, turning over in bowl so fully saturate, then lay them gently on griddle, trying not to have edges touch to avoid them sticking together. Cook until golden brown, flip, and cook until other side is golden brown.
Place on plates and butter immediately while still hot. Sprinkle with sugar (if you're me) or drizzle with maple syrup.
My formula for recipe adjustment:
-1 egg and 1 Tbsp. of half and half for every 2 pieces of bread, then adjust vanilla and cinnamon accordingly as well.
