Easy Alfredo Sauce


The first meal I ever made my husband was Chicken Alfredo.  We'd been dating for about a week.  I invited him to come over for supper.  When he got to my house, he mentioned his stomach hurt, but thought maybe he was just hungry.  I proudly served him a delicious plate of creamy, garlicky Chicken Alfredo.  He ate it, and then rushed to the bathroom and threw it all back up within about 30 minutes.  I still love Alfredo; he cannot even stand the smell of it 25 years later.  He has no idea what he's really missing!

6 Tbsp Butter
6 Tbsp Flour
4 cloves Garlic, minced or grated
3 cups Half and Half
2/3 cup shredded Mozzarella cheese
2/3 cup shredded Parmesan cheese (NOT canned, grated Parmesan)
Ground black pepper to taste

Add butter, flour, and garlic to a heavy, medium-sized saucepan over medium heat.  Whisk together until it's smooth and bubbly.  Pour in half and half, and whisk gently, bringing to a boil.  Reduce heat and whisk frequently until it thickens.  Add cheeses and stir until sauce is smooth.  If it's too thick, add milk or half and half to get desired consistency.  Grind in black pepper to personal preference.  

Serve over pasta of choice and add a desired protein as well if you choose.
