Instant Pot Magical Mashed Potatoes

These mashed potatoes are absolutely delicious.  You will want to climb right in that Instant Pot and roll around in them.  I kid you not; these are THE BEST mashed potatoes ever, and they're super easy to make! 


Instant Pot Magical Mashed Potatoes

               8-10 Golden Klondike or Yellow potatoes
               1 stick (8 Tbsp) butter (not margarine!)
               8 oz (1 cup) Sour Cream
               4 oz (1/2 cup) Cream Cheese
               Milk, cream, or half and half (your preferences)
               1 Tbsp Sea Salt (and a little more as preferred)      
               Water

Peel potatoes, cut in halves (fourths if you have a big one), and add to Instant Pot.  Fill with water, just to the top of the potatoes.  Add salt, close and seal lid.  

Set to Manual Cook for 12 minutes.  

When the 12 minutes is up, quick release the pressure, remove the lid, and drain the potatoes immediately.  

Add butter, sour cream, and cream cheese.  Using an electric mixer, mix potatoes until they are smooth and creamy.  Add a splash of milk, cream, or half and half to get them to the desired consistency.  If needed, add a little more salt for personal preference as well.
